With the sun shining and flowers blooming, baking some simple recipes can be a fun pastime for anyone. Follow these recipes to make some baked goods of your very own.
Strawberry Cream Cookies
Ingredients:

2 cups diced strawberries
1 Tbsp lemon juice
1 ⅔ cups flour
1 tsp baking powder
¼ tsp salt
¼ cup unsalted butter
4 ounces cream cheese
¾ cup sugar
2 tsp vanilla extract
2 large eggs
6 ounces white chocolate chips
Baking Instructions:
Dice strawberries and add lemon juice. Toss together.
In a separate bowl, add together 1 ⅓ cups of flour, baking powder, and salt. Sift together.
In an electric mixing bowl, cream together butter and cream cheese. Then add in sugar, vanilla, and eggs. Gradually add in ½ cup of sifted dry ingredients at a time. Next, mix in white chocolate chips.
Drain strawberries and sprinkle 2 tablespoons of flour on them. Toss together, then fold the strawberries into the dough.
Refrigerate dough for 10 minutes.
Remove from the fridge and use a cookie scoop to put dough onto a pan with parchment paper.
Bake for 15-20 minutes at 350℉.
*Note: These cookies have a soft dough, so handle carefully after baking

Lemon Coconut Bars

Ingredients:
2 cups flour
1 ¼ cups brown sugar
¾ cup butter
3 large eggs
½ tsp salt
½ tsp baking powder
1 ½ cups finely chopped walnuts
1 ½ cups sweetened shredded dried coconut
2 tsp lemon juice
*Lemon glaze: In a bowl, mix 1 cup powdered sugar, 1 ½ tsp grated lemon peel, 1 tsp warm water, and 1 tbsp lemon juice until smooth.
Baking Instructions:
In a bowl, mix 1 ¾ cups flour and ¼ cup brown sugar. With a pastry blender or your fingers, cut in the butter.
In a 10×15-inch pan, press the mixture into a smooth, firm layer. Bake at 350 degrees until slightly dry to the touch, about 10 minutes, and then let cool for 15 minutes.
In a separate mixing bowl, beat the eggs lightly. Then add in salt, baking powder, and the remaining brown sugar (1 cup) and flour (¼ cup).
Stir in walnuts, coconut, and lemon juice. Spread over the baked crust and bake again at 350℉ for 20-25 minutes or until lightly browned.
When removed from the oven, immediately brush on lemon glaze.
Let cool completely before serving.
